Some of the pioneering wine makers on the sun-kissed east-facing slopes 500 m above sea level around Lebenberg Castle, which overlooks the village of Cermes, discovered early on how to plant vines from the primitive rock of France. The credo was, and still remains: “only the best Sauvignon Blanc clones in the best locations with low yields”. Morning sunshine, downslope winds, plus a shale and quartz-rich soil provide the ideal conditions for a minerally, delicate and fiery white wine with a pleasing acidity structure. The unique palate feel is rounded off by a discreet hint of wood.

Age of vines:

15 - 25 years

Vinification:

Cold maceration for 12 hours, followed by the temperature controlled alcoholic fermentation in steel tanks and wooden casks. The wine ages for about 5 months on the fine lees.

Tasting notes from our winemaker:

The colour is greenish yellow. Notes of elderberry, tomato leaves and gooseberries on the nose. Very elegant and racy wine with a fine, long finish.

asparagus, grilled vegetables, fish and goat cheese

Wine storage:

Store bottles lying down, in a dark place at a maximum temperature of 15°C.
Humidity: ideally between 50–70%.
Odour-free cellar, as foreign odours can affect the wine.
