Cold maceration for 12 hours in the press. Alcoholic fermentation in small stainless steel tanks. Ageing on the fine lees for 5 months.
Lemon green in colour. Aromatic in the nose, reminiscent of nutmeg, herbs and lemon balm. Soft, complex and elegant on the palate, with a wellbounded, fresh acidity.
